Ingredients
1.0 tbsp better than boullion vegetable stock1.0 cup Milk, SO Delicious® Coconut Milk, unsweetened, 1 cup serving74.0 gram(s) bell pepper, red, sweet, raw0.25 cup, chopped Onions, raw3.0 clove Garlic5.0 slices (1" dia) Ginger Root1.0 tbsp Extra Virgin Olive Oil1.0 tsp Sriracha Hot Sauce (Rooster sauce)1.0 cup Tofu, firm2.0 cup Spaghetti, cooked without added salt (pasta)Small lime
Directions
In a wok heat olive oil over medium heat, add garlic, ginger, and diced bell pepper, cook for one minute. Add vegetable stock and coconut milk and tofu, bring to boil. In a medium pot, boil water and add pasta. Add scallion/ small onion, sriracha, cooked pasta, warm through and serve. Optional: squeeze fresh lime juice over to draw out more flavour.

Serving Size: Makes 4 bowls of soup, light on the broth
