Chilled Cucumber Avocado Soup

Ingredients

1 chilled cucumber1 avocado2 scallions, chopped1/4 cup mint leaves, chopped (can be left out)1/2 cup well-shaken buttermilk1 1/2 cups cold watersalt and pepper to taste
1) Cut cucumber into 3 equal pieces, then coarsely chop 2 of the cucumber pieces. Coarsely chop half of the avocado.
2) Blend together the chopped cucumber and avocado and the mint leaves, scallions, buttermilk, and water until smooth. Taste and season with salt and pepper as needed.
3) Chill soup, uncovered, 15 minutes.
4) Cut remaining cucumber and avocado in 1/4 inch pieces and stir into soup.

This sounds delicious! Can't wait to try it. Mint, cucumber, and avocado are some of my favorite things.
Note for the people who can't keep buttermilk on hand -- you can approximate buttermilk by adding 1 tbsp of vinegar or lemon juice per cup of regular milk and letting them sit 10 minutes. - 6/9/09

I'm glad to see that this has so many good reviews... I think I will be trying it this summer... I am one who doesn't buy buttermilk and will just make my own - 1 tablespoon lemon juice added to low-fat milk to make 1 cup... very easy, cuts calories and fat, and it is always available :) - 6/24/10

This recipe was delish with buttermilk, but tonight I made it again with 1/4 C FF Greek yogurt mixed with skim milk and juice of a small lemon to make about 3/4 cup - then added water to equal 2 C liquid. Both times I made this I added one small clove of garlic mashed w/ salt. OMG! SO good! - 6/24/12
