Single Serve Healthy Pancake

Ingredients
1.0 tbsp *Flax Seed2.0 tbsp Maple Grove Farms 100% Pure Maple Syrup40.0 gram bisquick baking mix (original)1.0 tbsp Chia Seed Natures Wild Grown0.33 tbsp coconut oil mementa organic refined
Directions
Grind in coffee grinder your chia&flax seeds. Mix seeds with enough water to let seeds absorb. Let sit 5 minutes or more. Add Bisquick (1/3 C) and add enough water to make pancake batter consistency. Mix well. Heat up coconut oil in non stick skillet. Cook as a regular pancake but will be very moist because of chia seed. I cook a bit extra on low with a cover and even take pancake out and cut up and return to covered pan, since I like mine more dry. Dip cut up pancake pieces in Maple syrup. Serving Size: Makes 1 good size pancake
