Roasted Red Pepper Chicken Chili

2 lbs Chicken Breast1 large Red Pepper, Chopped1 cup Celery, Chopped1/2 cup Onion, Chopped2 Tbsp Minced Garlic2 cans Red Kidney Beans, drained1 jar Mezzettta's Roasted Red Peppers2 cups Chicken Broth3 Tbsp Chilli Power1 Tbsp Cumin2 tsp Cayenne PepperSalt and Pepper
Saute chopped red pepper, onion, celery and garlic in a skillet w/ 1 tsp olive oil. Add chicken breast, pepper/celery/onion mixture to a crock pot. Add in spices. Blend Jar Red Peppers with juice in a blender until smooth. Pour over chicken. Add rinsed beans and 2 cups of chicken broth. Cook on low for 6-8 hours, or high for 3-4 hours. When 3/4 cooked, shred chicken breasts.
