Chicken & Black Bean Mexican Rice

Ingredients
1 cup long grain brown rice2 cups water1 tsp chicken bouillon12 oz. grilled chicken fajita meat1 can black beans, rinsed½ cup tomatoes diced with chilies¼ Shredded 2% Mexican cheese blend
Directions
Combine rice, water and boullion in sauce pan and bring to boil. Reduce heat and simmer for 30-45 minutes. In a skillet combine fajita meat, black beans, tomatoes and rice. Cook until warm. Makes 4 servings. Sprinkle w/ cheese.

    I gave it a 4 for it's simplicity & taste, which is usually what I am looking for in a recipe. I made it with boil in bag brown rice (3 bags), 2 cans of black beans, 2 cans ro-tel and I marinated the chicken in my own fajita sauce. Turned out great and plenty of leftovers for lunches the next day. - 8/21/13
