Canadian Bacon and Vegetable Breakfast Casserole

Ingredients
PAMŪ Olive Oil No-Stick Cooking Spray 1-1/2 cups fresh broccoli florets, halved 1/2 cup chopped Canadian-style bacon 1/2 cup shredded white Cheddar cheese 1/2 cup chopped roasted red peppers 1 carton (16 oz each) Egg BeatersŪ 100% Liquid Egg Whites 1/2 cup fat free milk 1/4 teaspoon salt 1/8 teaspoon ground black pepper 3 wheat English muffin, halved, toasted
Directions
1. Preaheat oven to 350 degrees Fahrenheit. Spray 8x8-inch baking dish with cooking spray. Place broccoli, bacon, cheese and peppers in a dish.
2. Combine Egg Beaters, milk, salt and pepper in a medium bowl until blended. Pour over broccoli mixture in dish.
3. Bake 35 minutes or until set. Serve casserole on muffin halves.

Serving Size: Makes 6 servings.
