My Favorite Frittata

1 medium (2-1/2" dia) Onion, chopped225 grams Mushrooms, fresh, chopped1 cup, chopped Broccoli, steamed1 cup Spinach, fresh, chopped8 large Egg, fresh, whole, raw .5 cup Almond Breeze Unsweetened Almond Milk .5 cup Parmesan Cheese, grated 1 tsp Salt 1 tsp Pepper, black 1 cup, shredded Cheddar Cheese
1. In an oven-save saute pan, saute onions and mushrooms until onions are soft. Add the broccoli and spinach and stir until thoroughly mixed.
2. In a bowl, mix the eggs, almond milk, Parmesan cheese and salt and pepper. Whisk until thoroughly mixed together. Pour over the vegetables and cook until the eggs solidify only on the bottom.
3. Cover the eggs with the cheese and transfer the saute pan into the into a 350 degree oven for 15 minutes or until cook through.
Serving Size: Cut into 8 wedges
