Shrimp, veggie, pasta stir fry

Ingredients
2 cups chicken broth (low sodium)2 oz. spinach linguini2 tbls. olive oil2 tbls. lemon juice1/2 ts. salt (optional)1 ts. lemon pepper2 oz raw deveined shrimp (about 15 medium)1 small red onion1 large stalk celery 1 large carrot1 cup cole slaw mix1/2 large yellow squash2 tbls dried parsley
Directions
Bring chicken broth to boil. Add linguini, and cook until done, about 8 minutes.

In separate pan heat olive oil and lemon juice on medium high heat. Add shrimp, salt and lemon pepper. Cook until shrimp are pink. Add onion, celery and squash. Cook 2 minutes. Add cole slaw mix and carrots. Cook 3 minutes. Remove from heat. Add parsley. Serve. Makes 2 servings.
