Cauliflower Enchilada Casserole

Ingredients
2 cup Colby and Monterey Jack Cheese shredded 1 medium (2-1/2" dia) Onions, raw 20 oz Sams Club Seasoned Rotisserie Chicken 1 head, large (6-7" dia) Cauliflower, raw 8 serving Ortega Enchilada Sauce 1 cup Bush's, Black Beans
Directions
Rice the cauliflower and place half in the bottom of a 9x11 baking pan. Drizzle with enchilada sauce. Debone the chicken and place half of the shredded chicken on top of the cauliflower. Top with a handful of the cheese and sprinkle with half of the chopped onion and a half cup of black beans. Repeat.
Bake at 375 for 30-45 minutes until golden and bubbly.
