Low Carb Cauliflower au gratin

Ingredients
2 head Cauliflower, raw 1 cup Heavy Cream 1 cup Kraft Shredded Parm Cheese Cheese 1 cup, shredded Cheddar Cheese 1 tbsp Xantham gum 1 tsp Pepper, black 1 cup Kraft 100% Grated Parm & Romano Cheese3 tbsp Butter, salted
Directions
*Parboil cauliflower and drain thoroughly. Place in rectangular pyrex. *In saucepan melt butter and whisk in xantham gum and pepper over medium high heat. Add cream And whisk continually until the cream reaches "scalded" state (bubbling around edges but not boiling). Turn heat to medium low. Continue whisking while adding parmesan/romano cheese and parmesan cheese. Stir until cheeses are fully combined and the liquid is thickened (about 5 minutes). Remove from heat. Pour over cauliflower. *Top with shredded cheddar *Bake until bubbling and cheddar is browned on top
