Tuscan-Style Chicken Thighs

Ingredients
3 garlic cloves, minced1 sm. shallot, chopped1 TBSP fresh rosemary1 TBSP EVOO1 TBSP Dijon Mustard1 TBSP Lemon Juice1 tsp Lemon zest6 bone-in Chihcken thighs1 tsp salt1/4 tsp pepper
Directions
1. Combine the garlic, shallot, rosemary, oil, mustard, lemon juice and lemon zest in a zip-close plastic bag; add the chicken. Squeeze air out and seal bag; turn to coat the chicken. Refrigerate, turning the bag occassionaly, at least 2 hours or overnight.

2. Preheat the oven to 450F. Place th rack of a rosting pain in the pan; spray with canola nonstick spray. Remove the chicken from the marinade; discard marinade. Transfer the chicken to the pan ans sprinkle with the salt and pepper. Roast the chicken until cooked through, 30-35 minutes.
