Ingredients
2 large Egg, fresh, whole, raw 3 tbsp Heavy Whipping Cream 0.5 cup, pieces or slices Mushrooms, fresh 1 cup Spinach, frozen 0.5 cup, shredded Cheddar Cheese 0.5 small whole (2-2/5" dia) Tomatoes, red, ripe, raw, year round average 0.5 cup, diced Ham, regular (11% fat)
Directions
Beat eggs and cream, season - set aside. Spray silicone muffin tray with pam, place, mushrooms, ham and spinach in tray, pour over beaten egg, place 1 slice of tomato on top and then cheese. Bake in a moderate oven 15-20 minutes until golden brown on top.
