3 Roma tomatoes, diced2 Bell Peppers (any color), diced 1/2 cup red onion, diced 1 Jalepeņo Pepper, minced (optional)2 cans black beans, rinsed 1 can Green Giant White Shoepeg Corn, strained 1/3 cup cilantro, fresh, chopped 1/3 cup lime juice, fresh squeezed 1/3 cup Extra Virgin Olive Oil 1 tsp salt1/2 tsp cumin1/4 tsp cayenne pepper (optional)
Directions
chop vegetables, rinse black beans, mix all together
