In a large (6 quart) pot saute onions and mushrooms in olive oil until tender. Add all other vegetables (reserving spinach) and liquids. Season to taste. Bring to a boil. Reduce to simmer until done to taste. Add spinach toward the end of cooking if you don't want it too "done."
