Ingredients
2.0 tbsp Olive Oil150.0 Grams Broccoli, fresh350.0 Grams Cabbage, fresh400.0 Grams Cabbage, fresh150.0 Grams Carrots, raw100.0 Grams Cauliflower, raw150.0 Grams Celery, raw200.0 Grams Mushrooms, fresh1.0 medium (2-1/2" dia) Onions, raw75.0 Grams Scallions, raw100.0 Grams Spinach, fresh350.0 Grams Zucchini1.0 serving hunt's diced 14.5 oz can43.5 oz swanson broth 14.5 oz can2.0 cup (8 fl oz) Water, tap
Directions
In a large (6 quart) pot saute onions and mushrooms in olive oil until tender. Add all other vegetables (reserving spinach) and liquids. Season to taste. Bring to a boil. Reduce to simmer until done to taste. Add spinach toward the end of cooking if you don't want it too "done." Serving Size: Each pot makes approximately 16 cups
