Honey-Balsamic Glazed Roasted Beets & Carrots

5 beets (2" dia, sphere) Beets, boiled 3 carrot Carrots, cooked 3 tbsp Balsamic Vinegar 2 tbsp Honey 1 tbsp Extra Virgin Olive Oil
roast beets in foil for 1 1/2 hrs, set aside when done till cool enough to handle
Chop carrots to 1 inch pieces, drizzel with oil and roast for 30 min
Combine balsamic vinegar and honey, add to skillet with carrots and any oil left in pan peal beens slice into wedges add to skillet
heat over med-high till glaze bubbles and thickens.
Serve hot or cool on a salad
