Stuffed Baby Zucchini for Two

Ingredients
2 large baby zucchini halved lengthwise2 oz reduced fat shredded cheese - I used a 4 cheese mexican blend1/4 medium red bell pepper1/4 medium red or sweet variety onion1 clove garlic1 tsp chili powder1 tbsp Parsley (I used dried but fresh would be even better)Salt and Pepper to taste
Directions
Hollow out centers of zucchini halves and reserve.
Using small food chopper, finely chop zucchini guts, bell pepper, onion and garlic (add parsley, too, if using fresh).
Add the chili powder, parsley, salt and pepper and any other seasoning you might like to the chopped veggie mix.
Add one half the cheese to the mixture and combine well.
Spoon into zucchini halves and spread rest of cheese on top.
Bake at 400 degrees for approximately 30 minutes - cheese should be golden brown.
Makes 2 servings - two halves per person.

    This recipe was a little bland for me and my husband. It was easy to make and looked delicious but I would add more spices next time (red pepper, cajun seasoning, etc.) and try some different cheese (I used cheddar) to give it more taste. Overall it was good and will make it again with modifications - 5/27/09

    This is the BEST!!! My 16 year old son loved these. He wanted more cheese, so I added more on top of his. I did make these and will make again. I think for a winter dish I will put in a baking pan and put some tomato sauce over it and then bake. Again - WONDERFUL & filling - 6/15/08

    This is great as is or is easily tweeked to your liking. I once made it using Italian seasoning instead of the chilie powder and pouring 1/2 can chopped tomatoes on top before baking. It was good too. - 11/12/08

    This was an OK version. I add ,mushrooms(fresh or canned), black olives and ground turkey ,and then grate a drier saltier cheese on top(parm/pecorino/romano), and sometimes breadcrumbs for a little crunch. Kick it up a notch people! - 9/14/09

    My son(14) loved it. Added some fresh chopped mushrooms to it and some cumin and made it with jack cheese. You could add Italian seasoning and mozzarella or any other combinations that your family likes. This is awesome for using up whatever happens to be in teh refrigerator. - 9/12/09
