Paleo Cranberry skillet cake

5 cup, chopped Cranberries 2 tbsp Honey 3 large Egg, fresh, whole, raw 0.5 medium (7" to 7-7/8" long) Banana, fresh 0.25 cup Almond Breeze - Vanilla 0.5 cup Arrowroot flour or coconut flour 0.35 cup Yellow Cornmeal 1 tsp Cinnamon, ground 1 tsp Vanilla Extract 0.5 tsp Baking Soda 0.3 cup dry Oatmeal (plain)
1. Place cranberries and honey in a small saucepan over medium heat and stir until the cranberries "pop" and create a compote, set aside
2. In a medium size bowl, mix together eggs, milk, banana, and vanilla, combine well
3. Add the cinnamon, baking soda and flour to the wet ingredients, combine well
4. Spray cooking spray on the bottom of a 9 inch skillet
5. Spread the cranberries
6. Cover with the batter
7. Bake in the oven for 20 minutes
