Baked Cod w/ Vegetables

Ingredients

Cod Fillets, 24 ozOlive Oil, 1 tbsp Garlic, 2 cloves Carrots, raw, 1 cup, gratedZucchini, 1 cup, gratedSea Salt, 0.25 tsp Pepper
Preheat oven to 450 degrees.
On top of the heavy duty aluminum foil, lay cod fillets. (You will be making a 'packet' from the foil, so be sure that there is enough foil to wrap over the top and come up around the sides.)
Rub olive oil and garlic on the fillets. Sprinkle with salt and ground pepper. Put grated vegetables on top of the fish and wrap each fillet into a packet.
Bake for 20-25 minutes, checking at 15 for doneness. When fish is done, it will flake easily with a fork. Unwrap each packet and serve. Juices in the bottom of the packet can be used to drizzle over pasta, rice or other vegetables.

My husband really liked this but I wasn't so sure. My slice of fish was thinner than his so it ended up over coked. There was also a funny smell when I opened the package, something about the mix of ingredients. Felt healthy after eating it though and was perfect balance with baked sweet potato. - 8/31/09

This was my first time ever, making fish. I am to eat more of it, per my doctor. I was really nervous that I would mess this up, or that I wouldn't like it (I'm not a big fan of fish). IT was actually really easy, pretty, and tasty in a mild way. I'll definitely make this again! - 2/26/08
