Kat's Cauliflower Rice

2 head, large (6-7" dia) Cauliflower, raw 4 clove Garlic 1 package (5 oz) Parmesan Cheese, hard 2 tbsp Extra Virgin Olive Oil
Grate your cauliflower. I use the food processor but you can use a grater too. Just about 5 pulses in the food processor tho, too much will make it too fine.
In a wok or skillet, add 1 tbsp olive oil and 2 cloves minced garlic
When hot, add half of cauliflower, stir to mix up with oil and garlic, place glass lid on top.
Stir every 1 - 2 minutes and allow to cook till cauliflower is done to your liking, I like it a bit al dente myself.
Once the first half is done, do the same with the second half.
Place in bowl and stir in grated Parmesan.
Enjoy!
