Pumpkin Chocolate Chip Oat Flour Oatmeal Cookies

Ingredients
1/2 c unsweetened applesauce3/4 c splenda sugar blend for baking1 egg white1 c canned pumpkin 1 tsp vanilla2.5 c oat flour1 tsp baking soda1 tsp baking powder1 tsp salt1 tsp cinnamon1 tsp nutmeg1 cup mini chocolate chips (I used Hershey's Special Dark)1 cup oats
Directions
Preheat oven to 350. Cream together butter and Splenda blend, then add in the egg, pumpkin and vanilla. In a separate bowl, combine the dry ingredients (from flour to nutmeg). Add the dry mix to the wet mix and mix with blender. After all is mixed, stir in oats and chocolate chips. Drop onto cookie sheet. I made 73 cookies using s small cookie scoop, and ate about 1-2 cookies worth of dough. Cook about 12 mins.

    I made them as pan cookies in a 9 x 13 pan. They are bigger and have more calories, but that's easier than all the cookies. I used the food processor to make the oat flour. Next time I am going to leave out the chocolate chips and use cut up apple and eat them for breakfast like a protein bar! - 12/21/10
