Vegetarian Lentil Lasagna

Ingredients
2 1tsp Canola Oil 1.5 cup, chopped Carrots, raw 3 clove Garlic 1 tsp Chili powder 1 tsp ground tumeric (by INSPIREDBYCHJ) 1 tsp Curry powder 1 cup Dried Lentils, Green or Brown (1/4 cup dry) (by LIGHTNINGPAW) 0.5 cup Diced Tomatoes, Canned, Unico (by IAMFREETORUN) 2 cup Spinach, frozen 6 serving PC Blue Menu Lasagne (1 serving: 1 sheet) 1 cup, shredded Cheddar Cheese 8.6 serving Saputo Ricotta Fiorella 5% M.F.
Directions
1. Cook green lentils
2. Sauté carrots with garlic and spices (and oil) in large skillet
3. Add lentils to skillet (with carrots)
4. Add canned tomatoes. Let simmer together
5. Mix spinach and Ricotta in separate bowl
6. Cook lasagne slightly
7. Layer Lentil & Tomato mixture, spinach and ricotta mixture, and pasta
8. Finish with tomato mixture and top with cheddar
9. Bake at 350 Far. for 30 mins
