Black Bean Beet Burgers

3/4 cup cooked quinoa 3/4 cup red onion, finely chopped 1 cup mushrooms, finely chopped 1/8 tsp salt 1/8 tsp black pepper 1 15 oz can black beans, rinsed 1 cup beets, finely grated 1 tsp cumin 1/2 tsp chili powder 1/2 tsp paprika 1/2 cup walnuts, ground into a loose meal
Heat a large skillet over medium-low heat and add a bit of olive oil. Add the onion and saute. Once the onions are soft add the mushrooms, salt and pepper. Cook until the onions and mushrooms are slightly browned.
Remove from heat and add the black beans and mash. Add in the quinoa, beets and spices and mix. Finally, add the walnut meal. Set in the fridge to chill.
Preheat the oven to 375 degrees. Line a baking sheet with foil and coat with nonstick spray. Form mixture into 6 patties and arrange on the baking sheet. Bake for 30 to 45 minutes, gently turning them at the halfway mark. Cook longer to dry them out more, if desired.
