Smidget's Salt And Vinegar Chips

Cucumber (english, baby gourmet or pickling are best for this recipe)Balsamic VinegarSaltAssorted Spices (optional)
Slice the cucumber in "chip" slices.
Lay them out on a plate. Using a cooking brush, brush each slice with balsamic vinegar.
Cover and refrigerate for about 30 min to 1 hour.
When chilled, sprinkle with sea salt and black pepper.
You can add other spices to taste to perfect your own style of "chypp".
For me, it really satisfies that quest for a crunchy, tangy snack. And at less than 20 calories, how can you go wrong?

I really liked this, although I did vary it a little. I very thinly sliced my cucumber. Rather than brushing on the vinegar, I put 2 tsps of apple cider vinegar over the cucumber in a bowl and sprinkled with salt. Still very crunchy and a great side dish. I just stir before serving. - 1/7/09
