Carnitas Bowl

Ingredients
16 ounces Chicken Breast (cooked), no skin, roasted 7.5 C Cooked Brown rice 5 cup Yellow Sweet Corn, Canned 200 grams Cilantro, raw 3 fruit (2" dia) Limes .5 fruit (2-5/8" dia) Orange (juice & zest)1 cup Green Chili Peppers, canned 3 oz Cojita Cheese 4 tbsp Paprika 3 tbsp Cumin seed 7.5 cup Beans, black 10 cup, shredded Romaine Lettuce
Directions
Crock pot chicken until shreds. Cook rice, add some cilantro & lime once it cools. Add juice of an orange, juice of a lime, some zest of both, chili peppers, paprika & Cumin to meat. Add cojita, paprika, cilantro & salt to corn. Toss. Assemble in bowls. 1 C rice, 3/4 C chicken, 1/2 C Corn, 3/4 C beans, however much lettuce you can fit on top & 2 lime wedges.
