4 cup Egg White (32 oz.)8 oz Mozzarella Cheese, part skim milk shredded 1.5 lb. Tyson boneless, skinless chicken breast diced small8 oz. Baby Bella Mushrooms diced0.5 cup, chopped Sweet peppers diced small1 cup Garden Fresh Salsa, Jack's Special Medium Cooking spray 1 package (10 oz) Spinach, defrosted and drained well
Directions
Cook chicken Stir fry veggies and mushrooms Add spinach Fill lined and greased cupcake pans 3/4 of the way full Bake at 350* for 30 minutes
