4 large eggs, beaten1 cup liquid egg whites3 slices black forest deli ham12 tsp shredded low fat cheddar cheeseeverything bagel seasoningcooking sprayBe creative: spinach and feta is great, sauted peppers and onions. Anything you would put in an omelet will work here.
Preheat oven to 375.
Spray a 12 cup muffin tin with cooking spray. Add a tsp of chees to the bottom of each cup (this will make the bottom more crispy). Finely chop the ham and distribute among the cups. Add a sprinkle of everything bagel seasoning. If you don't have this, salt, pepper, and a little scallion is delicious.
Beat whole eggs and egg whites together until frothy in a bowl with a pour spout. Carefully pour eggs into the cups.
Bake for 22 minutes. You can refrigerate leftovers and microwave for 30 seconds. You can also freeze them and microwave for 2 minutes.
