Poultry: Quick and Easy Cheesy Chicken Broccoli and Rice Casserole

Ingredients
2 bags Uncle Bens Ready Rice (Brown and Wild Rice)16 oz Rotisserie Chicken, no skin, chopped 1 tbsp Butter, unsalted 1 tbsp Extra Virgin Olive Oil 1 small Onions, chopped finely0.25 cup all purpose flour 1 cup Swanson Natural Goodness Chicken Broth 0.5 cup Half and Half Cream 12 oz bag Broccoli3 tbsp Dijon Mustard 0.75 cup Parmesan Cheese, freshly grated, reserve a couple of tbsp of this to sprinkle over the top of the casserole
Directions
Adjust oven rack to upper-middle position and heat broiler.

Cook ready rice according to directions and layer into bottom of a broiler-proof dish

Layer chopped Rotisserie chicken over rice.

Steam broccoli in bag in microwave according to package instructions. layer over the top of chicken.

While broccoil is cooking, heat butter and olive oil in skillet and cook over medium heat. When hot, add onion and cook until it begins to brown, about 2 minutes. Stir in flour and cook until golden, about 1 minute. Whisk in broth and cream and simmer just until beginning to thicken, about 3 minutes. Remove from heat and add dijon and parmesan whisking until fully incorporated.

Pour sauce over top of the casserole making sure the broccoli is well covered, sprinkle remaining parmesan over the top and place under broiler until slightly browned, 2-4 minutes. (As an alternative, you can stir the broccoli into the finished sauce and then pour over the top.)
