3.0 cup Cauliflower, raw2.0 clove Garlic1.0 cup, chopped Onions, raw1.0 package (10 oz) Spinach, fresh1.0 serving 1 Med. Green Bell Pepper74.0 gram(s) bell pepper, red, sweet, raw2.0 cup simply nature vegetable stock3.5 cup happy harvest diced tomatoes7.0 cup dakota's pride chick garbanzo beans30.0 gram curry powder0.08 cup maple syrup1.0 cup Thai kitchen lite coconut milk
Sautee onions and peppers for 4 to 5 minutes then add garlic and cook for another minute. Add onion and pepper mixture to slow cooker. Add all other ingredients except cauliflower, spinach and coconut milk. Cook for 3 hours on high. After 3 hours add cauliflower florets and cook for another hour. Add spinach and coconut milk and cook for 10 minutes until spinach is wilted.
