Apple Cake

8 cups chopped apples, de-skinned1 cup white sugar1 cup whole grain flour1 cup all purpose flour2 teaspoons baking soda2 teaspoons ground cinnamon1 teaspoon salt1/4 cup olive oil2 eggs, beaten2 teaspoons vanilla extract1 cup walnuts, chopped (optional)
1) Preheat oven to 350 degrees F (175 degrees C). grease and flour a 9x13 inch pan. in a large bowl stir together the sugar and the apples, set aside. sift together the flour, baking soda, cinnamon and salt.
2) In a large bowl stir together oil, eggs, and vanilla. add the apples and sugar and mix well. stir in the dry ingredients, (then nuts if so desired). pour into the prepared pan and spread evenly.
3) Bake in the preheated oven for 45 minutes or until cake springs to the touch.
