Nancy's Spinach and Feta Chicken Casserole

16 oz Chicken, Publix Rotisserie Mojo Chicken (deboned & skinned and chopped)2 cup Cut Leaf Spinach - Frozen thawed and drained1 tbsp minced onions 8 oz Cream Cheese .50 cup Mayonnaise, regular (mayo) 0.50 cup Sour Cream .5 cup, crumbled Feta Cheese (or more)2 oz Mozzarella Cheese, part skim milk Salt and pepper. Greek seasoning.
Preheat oven to 350 if baking immediately. Or you can prep ahead and keep in the refrigerator for a day or two.
Combine cream cheese, sour cream, mayo, and spices and mix thoroughly. I do this first in a big metal bowl.
In the big bowl combine the cream cheese mixture you just made with the chicken, spinach, feta cheese, and mix well. Dump into a 9x13 baking dish sprayed with cooking spray. Sprinkle mozzarella cheese on top. Bake until hot about 35 minutes.
