Beefy Mexican Pie

1 lb 96/4 Extra Lean Ground Beef3 tb minced garlic, separated1 c chopped onion1 14-oz can diced tomatoes with green chiles3/4 c 2% reduced fat shredded cheddar cheese1/2 c heart-smart bisquick1 c skim milk1 egg2 egg whites
1. Preheat oven to 400.
2. Brown beef with onion and 2 tb of the garlic. (I used leftover beef from spaghetti night, even faster!)
3. Spray a 9x13 pan with cooking spray. Spread tomatoes over bottom of pan, followed by beef, followed by cheese.
4. Mix milk, eggs, bisquick, and remaining tb of garlic (with whisk, or I used my magic bullet blender). Pour evenly over the top of the casserole.
5. Cook 30 minutes or until lightly browned.
