Spanish style chicken with tomato sauce

1.0 medium (2-1/2" dia) Onions, raw3.0 clove Garlic1.0 serving 1 Med. Green Bell Pepper100.0 Grams Mushrooms, fresh800.0 Grams Canned Tomatoes2.0 tsp, crumbled Bay Leaf460.0 gram chicken breast skinless2.0 tbsp Extra Virgin Olive Oil
Peel and chop onion,pepper and garlic, slice mushroom.
Fry all till onion is translucent.
Add tinned tomatoes and bay leaves
Simmer on a low to medium heat for ten minutes,stirring often.
While the sauce is cooking , season The raw chicken with salt and pepper.
Pan fry the chicken over a medium heat until browned.
Remove chicken from the pan and slice into thick slices then add to the sauce mix.
Simmer for ten more minutes.
Then serve.
