Sweet and Sour Pork in Crockpot

2 lbs Pork Shoulder roast, cubed1 Green Pepper, sliced in strips1 Small Onion, sliced2 large carrots, peeled and sliced3 small sweet pickles, chopped coarsely1/4 C brown sugar, packed2 Tbsp cornstarch1/4 C. water1 C pineapple juice from pineapple chunks1/4 C cider vinegar1 Tbsp Soy Sauce2 C Pineapple chunks
Place cubed pork, green peppers, onions, carrots, and pickles in crock pot.
In bowl mix together brown sugar and cornstarch, add water, pineapple juice, vinegar and soy sauce. Stir until smooth. Pour over meat and vegetables in slow cooker.
Cover. Cook 5-7 hours on low. One hour before serving add pineapples.
Serve over cooked Rice.
