Ginger and Garlic Carrots

Ingredients
2 small (5-1/2" long) Carrots, peeled and sliced into bite sized pieces1 tbsp chopped Shallots 2 tsp Ginger Root, minced3 cloves Garlic, minced1 tbsp Extra Virgin Olive Oil 1 tsp Tarragon, ground 1 tsp Salt .5 tsp Pepper, black
Directions
Heat grill. Combine all ingredients. Place on foil lined grill pan. Grill until desired tenderness Stirring once half way through. Takes about 10 minutes on the grill.

Can roast in the oven - 450 degrees for 10-20 minutes until done.
