Skinny Guy's Cuban Chicken

6 chicken thighs, skin and fat removed1 large onion, cut into eighths1 teaspoon red pepper (cayenne)1 tablespoon dried oregano1.5 cups canned black beans1 25 ounce can diced tomatoes, drained1 yellow bell pepper, cut into large chunks1 red bell pepper, cut into large chunks1 fresh jalapeno or other hot pepper, seeded and minced (optional)
Instructions:
Place chicken, onion, diced hot pepper (if using) and spices in a covered pot or Dutch Oven. Place in preheated 350 degree oven for 30 minutes. Add beans, return pot to oven. After 15 more minutes, add bell peppers and tomatoes and return to oven for another 20 minutes.
