Whole Wheat Cherry Muffins

2 c whole wheat pastry flour1/2 t salt1 T baking powder1/4 c brown sugar1 c fresh pitted cherries, chopped1 egg3/4 c skim milk1/2 t almond extract1 t vanilla1/4 c melted butter
1. In a large bowl, combine flour, salt and baking powder. In a smaller bowl, mix together the egg, milk, vanilla, almond extract and melted butter.
2. Dump the cherries into the flour mixture and then add in the liquids. Mix until everything has blended together.
3. Grease 12 muffin tins and then spoon batter into cups. Bake at 375 until tops are golden, about 25 minutes.
Makes 12 muffins.

Really liked these! I had some frozen fresh cherries from the summer that I needed to use. I made exactly as stated except with AP flour. Also, I found that while I baked the first 6 that the remaining batter fluffed in the bowl. Next time I'll let the batter sit a while to maximize the size. - 2/1/15
