Jello Refrigerator Cake

Ingredients
Duncan Hines Reduced Sugar Yellow Cake Mix12 oz. diet soda (light soda, not cola)1 large pkg. sugar free jello mixed into2 cups boiling water (set aside)1 container Cool Whip Free
Directions
Preheat oven taccording to package directions. Prepare 9" x 13" pan by spraying with cooking spray.

Mix 12 ozs. diet soda (Sprite or 7-UP) into cake mix. Pour into baking pan and bake about 30 minutes, or according to package directions. (The cake will only rise about half as high as when prepared with eggs & oil).

While cake is baking, boil 2 cups of water and mix in gelatin, stirring until completely dissolved. When cake is done, poke holes all over the cake top with a fork. Pour the jello mixture on the cake immediately after it is removed from oven. Let it cool before covering and placing into refrigerator.

Before serving, frost with entire carton of Cool Whip Lite. Divide into 12 equal pieces.

    I made this cake today. Instead of the sugar-free cake mix though, I used regular white cake mix. I also did 2 pkgs. of different jello (one cherry, one lime), and poured half of each over the top of the cake. Really good. I grew up on Christmas Jello poke cake, so this was very nostalgic to me! - 3/7/10
