Italian veggie with cheese

2 medium (2-1/2" dia) Onions, raw chopped5 medium whole (2-3/5" dia) Tomatoes, red, ripe, cut into quarters raw, year round average 2 cup, chopped Green Peppers (bell peppers) 2 clove Garlic minces1 pepper Jalapeno Peppers minced5 cup Squash - Yellow and Zucchini sliced into coins 5 medium (2-1/4" to 3-1/4" dia.) Potato, raw sliced into coins2 tbsp Extra Virgin Olive Oil 4 oz Mozzarella Cheese, part skim milk
In a large pot add oil onion, jalapeño, green pepper and sauté until onions are clear. Add tomatoes and cover pot for 5 min. Add zucchini and potatoes and mix well. Cover and simmer for 20-30 min stirring occasionally. Once potatos are cooked add mozzarella cheese and cover until melted. Stir cheese into veggies. Serve with meat or as a meal in itself
