Cauliflower Zucchini cheese cassarole

3 cup (1" pieces) Cauliflower, cooked 8 oz cheese- meunster (by FSGROSS) 8 oz Cabot Sharp Naturally Aged Cheddar Cheese - Vermont white cheddar 1 cup Milk, nonfat (skim milk) 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 3 cup Zuccini Squash
Preheat oven to 350 degrees.
Have an oven-safe casserole dish ready.
1. food process or rice cauliflower and zucchini
2. mix vegetables well and stir in onion
3. heat milk while melting all cheese into milk
4. Pour about 1/4 of the cheese into the vegetables and stir through. Repeat stirring each time until all cheese is mixed into vegetables. Keep melted cheese warm during this process soit will pour.
5. Pour mixture into an oven-safe dish.
6. Bake for about 40 minutes until as brown as you like it.
Serving Size: 1/8 of cassarole
