Chicken Lettuce wraps

4 oz. Chicken breast1 green onion, chopped1 garlic clove, minced [or 2 tsp garlic powder]1 cup Bell pepper strips2 Tbsp fresh Cilantro4 Romaine lettuce leaves1 cucumber 4" long, peeled and quartered lengthwise4 Spinach leaves1 cup Brocolli, chopped
Slice chicken into thin one ounce slices, lengthwise.
In a skillet brown chicken over medium heat for 6-8 minutes, stirring occasionally. Drain fat. Add onion and garlic. Cook unbtil tender. Stir in bell pepper. Cook stirring occasionally, until pepper is tender crisp and most of the liquid is evaporated.
Stir in Cilantro.
Spoon mixture onto lettuce leaves. Add 1 quarter stick of Cucumber, a spinach leaf and 1/4 cup chopped brocolli to each leaf.
Wrap lettuce leaf around mixture to make a bundle.
