Chicken Cauliflower Cheddar Chia Soup

2 tbsp Butter, salted 2 tbsp chopped Onions, raw 2 cup Cauliflower, raw 2 cup Swanson Natural Goodness Chicken Broth .5 tsp Nutmeg, ground 1 tsp Herbs de Provence .5 cup, fluid Heavy Whipping Cream 6 ounces Chicken Breast (cooked and shredded)0.5 cup Cheese, Cheddar Sharp Shredded Trader Joe's 2 tbsp chia seeds
melt the butter & cook the chopped onion and small florets of cauliflower for 10m until browned. Add the broth, nutmeg & herbs de provence. Simmer 15m. Add cream and remove from heat. Use an immersion blender to blend smooth. Add chia seeds and chicken and heat for 5m. Ladle into bowls, top with cheddar cheese and serve.
