Shrimp w/ Canadian Bacon & Mushrooms

Ingredients
1 lb. cooked shrimp (deshelled & devained)1 T olive oil1 cup fresh mushrooms, sliced1 T thinly sliced fresh basil1 clove garlic, minced3 slices Canadian Bacon, coarsley chopped1 medium tomato1/3 cup shredded Parmesan cheese
Directions
Heat oil in large nonstick skillet over medium high heat. Add shrimp, brown 2 to 3 minutes per side.

Add mushrooms, basil and garlic, stirring occasionally, until mushrooms are tender.

Stir in canadian bacon, tomatoes and parmesan cheese. Cook for 1 to 2 minutes more until warmed through.

Serve on top of 4 oz. pasta.
