Pomegranate Cranberry Quinoa

Ingredients
2 cup Water1/2 cup Ocean Spray Pomegranate Craisins1/2 tsp Salt (optional) 1 cup Quinoa 3 tbsp chopped Scallions1 tbsp Olive Oil 1 tbsp Lemon juice
Directions
1. Toast quinoa over medium heat.
2. Add water, craisins, and salt. Bring to a boil.
3. Reduce heat to simmer. Cover and cook 15-20 minutes. Remove from heat and let rest 5 minutes.
4. Stir in scallions, olive oil, and lemon juice.
