Zippy Beet Catsup

Ingredients
4 medium to large red beets, roasted, peeled and diced1 head roasted garlic (~15 cloves)¾ c of apple cider vinegar or champagne vinegar3 thai chilies, minced1⁄3 c coconut sugar1⁄2 small yellow onion, diced1⁄2 tsp Himalayan salt1 tsp smoked paprika1⁄4 tsp ground coriander1⁄4 tsp ground cloves
Directions
Place all the ingredients into a heavy saucepan over medium heat and bring to a simmer.
Loosely cover and simmer for 30-35 minutes, until fragrant and thickened.
Puree with an immersion blender or small stand blender until smooth.
Store in the fridge for up to 30 days or can 20 minutes in a waterbath
