Artichoke/Spinach smothered chicken

8 oz Best Choice Boneless Skinless Chicken Breast (frozen) 1 cup Spinach, fresh 1 1tsp Coconut Oil 2 oz Cream Cheese 2 serving Trader Joes frozen artichoke hearts (by GOODOOBEE) 0.25 cup Cheese, Mozarella, shredded low moisture part-skim, Crystal Farms
Preheat oven to 450. Set cream cheese out to soften. Thaw the chicken breasts, rinse and pat dry, salt and pepper. Place the artichoke hearts in a bowl, covered with water and steam in the micorwave for about 2 minutes. Cook the chicken breasts on medium heat in 1 tsp. coconut oil 4 minutes. Turn, salt and pepper this side and cook another 3 minutes. Removed chicken breasts from pan and place spinach in pan with residual coconut oil. Cook, stirring on low heat until spinach is wilted. Mix together, wilted spinach, steamed and drained artichoke hearts, cream cheese and mozzarella. Place chicken breasts in oven safe dish, cover with artichoke/spinach mixture and bake for 5-6 minutes or until mixture starts to brown.
