4.0 large Egg, fresh, whole, raw0.5 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average0.5 fruit without skin and seeds Avocados, California (Haas)2.0 medium Mushrooms, fresh0.75 cup Spinach, fresh2.0 tbsp chopped Onions, raw0.25 serving 1 Med. Green Bell Pepper1.0 tsp Garlic1.0 oz Mozzarella Cheese, part skim milk1.0 tbsp Extra Virgin Olive Oil
Saute chopped veggies (onion, peppers, mushrooms, garlic, spinach) in olive oil. Beat eggs and add to pan with veggies. Add fresh cracked pepper (optional) add eggs to pan.
Use your omelets skills or scramble :)
Place cooked eggs on plate and top with cheese, avocado, and tomato.
Hot sauce is a good addition as well.
