Keto friendly Almond Joy Fat Bombs

Ingredients
2 tbsp Coconut Oil 1/4 c T&T Coconut Milk (Rich) 1 c Shredded Coconut Unsweetened (Bob's Red Mill) 20 drops liquid stevia 1/2 tsp Almond Extract 1/4 tsp Xanthan Gum
Directions
Toast shredded coconut in a dry frying pan until barely golden - remove from heat. Add remaining ingredients and mix very well. Press into a rectangle on a cookie sheet or piece of waxed paper (parchment paper). Refrigerate until cool Cut into 12 pieces.

At this point you can dress these up by pressing an almond into the top of each square then dipping each square into some melted chocolate mixed 1:1 with coconut oil - not in nutritional info.

Store sealed in the fridge. These are very dangerous!
