Ingredients
2 orange peppers2 medium zuchini1 large yellow onion5 carrots 5 stalks celery1/2 bulb of garlic6 plum tomatoes8 cups water
Directions
Throw these veggies in a roasting pan, cook for one hour on 450 degrees - stirring not to burn.

Plop them outta the pan, throw in the big pot with 8 cups of water and boil it down. You now have a loverly (yes loverly) amazing veggie broth base for minestrone soup.

The calculation above (10 cups) is based on the amount I'm assuming before it boils down.
