Creamy vegetarian white chili

Ingredients
0.25 tsp Pepper, black0.5 tsp Salt1.0 tbsp Canola Oil1.5 cup kernels Yellow Sweet Corn, Frozen2.0 cup, chopped Onions, raw6.0 slice, medium (1/4" thick) Red Ripe Tomatoes or 6 whole canned tomatoes chopped4.0 cup Vegetable Broth2 oz can green chiles6.0 cup Cannellini Beans2.0 tbsp chili powder1.5 tsp ground cumin
Directions
1. Chop onion and measure out spices. 2. Add oil to a Dutch oven or large pot 3. Sautee onion for 5 minutes on medium. 4. Add garlic. Sautee for 1 minute 5. Add cumin, chili powder, thyme, corn and tomatoes. Cook for 5 minutes on medium heat. Mash 1 can (2 cups) of beans with a fork while mixture is cooking. 6. Add vegetable stock and 2 cups of beans. Cook 5 minutes or until a rolling boil with lid on. 7. Add mashed beans. 8. Reduce heat to low or medium low to summer. Cook at least 20-25 minutes without a lid. Serving Size: Makes 8 servings
