Blueberry Muffins

180g (10oz) plain flour3 tsp baking powder1/2 tsp salt140g (5oz) fine white granulated (caster) sugar1 egg240ml (8fl oz) semi-skimmed milk90ml (3fl oz) vegetable oil200g blueberries (or other summer berries)
Makes 12 muffins
1. Prepare muffin tins. Preheat oven to 375-400F (190-200C, Gas Mark 5-6).
2. In a large bowl, sift together: flour, baking powder, salt and sugar.
3. In another bowl (I use a large jug and add them together whilst measuring), beat egg with a fork. Stir in milk, followed by oil.
4. Pour all of wet ingredients into dry. Stir just to combine. Batter will be lumpy but no dry flour should be visible. Gently fold in berries at the end, using only a couple of strokes to avoid crushing fruit.
5. Spoon into muffin cups. Bake for 20-25 minutes.

I'm sorry, we don't use cups as a general rule in the UK. However, my mum gave me a very rough guide for converting cups/ounces: 1 cup = 4 oz flour, 8 oz white sugar, 6 oz brown sugar, 4 oz raisins. I don't know the conversions for anything else.
